Ingredients squash risotto 2 tbsp Olive Oil 1 large Onion 2 cup Arborio Rice 1/2 cup White Wine 4 cup Squash (preferably Butternut Squash) 4 cup Vegetable Broth 1/2 cup Grated Parmesan Cheese 1 tbsp Butter how to make squash risotto Start by sauteing the chopped onion Add the squash cook for about 2 min Now add the rice and brown it, stirring constantly so it doesn't burn, for almost 10 min. Add the wine and stir until it's absorbed by the rice Add 1 cup of the vegetable broth, and stir until it's absorbed by the rice. Keep adding broth and stirring until its absorbed for 20 minutes repeatedly: add broth, stir until it's absorbed, add more broth. 2 minutes before the end, add the Parmesan cheese and stir. Add the butter, and stir. Remove from the stove, cover and serve it after 2 minutes.

I like it sweet.

Ingredients monterrey chicken 4 frozen chicken breasts thawed 1 pepper to taste 4 tbsp barbeque sauce 1 cup shredded cheddar cheese 1 can diced tomatoes 1/2 cup bacon bits 4 sliced green onions how to make monterrey chicken Preheat oven to 400° Pound chicken to about 1/4" thickness, season with pepper. Grill the chicken until cooked. I use our George Foreman for about 8 minutes. Grease a baking dish. Arrange cooked chicken in dish. Spread barbeque sauce on top of each chicken breast (about 1 tbsp). Sprinkle cheese on top of chicken. Add some diced tomatoes, bacon bits, and green onions. Cook in 400° oven for about 5 minutes, or until cheese melts.

Ingredients leek n potato soup 2 large potatoes peeled + diced small 2 large leeks chopped 2 tbsp veg oil 2 large onions diced 3 tbsp heaped flour 1 1/2 pints vegetable stock 1 tbsp mixed herbs 1 salt + pepper to taste how to make leek n potato soup fry potatoes, leeks + onions in the oil until leeks are softening slightly. mix in the flour to cover the ingrediants. add herbs into the mix and stir well. add the stock slowly, a bit at a time, stirring as you go along. simmer for 30-40mins stirring frequently so it doesnt burn, until potatoes are cooked through. add salt + pepper to taste. serve as it is or blend into a smooth soup. best served with crusty bread.

Ingredients spaghetti and meatsauce 1 can stewed tomatos 1 can mushrooms with stems 2 lb ground beef/chuck/venison 2 can ragu mushoom spag sauce 1 packages parm cheese fresh 1/2 clove garlic 1 greek seasoning 1 1/2 box spaghetti regalli how to make spaghetti and meatsauce grease fry pan with EVVO let heat on 6 while you add ground beef dice garlic and mix with a sprinkle of Greek seasoning. add to simmering meat one meat is half way cooked place spag in boiling pot. cook spaghetti with a tablespoon of evvo and a sprinkle of the Greek seasoning. al dente should be firm to the bite but not crunchy. mix sauce and mushrooms wit strain grease from meat mix once medium done and add sauce and mushrooms. let simmer. strain pasta once done and leave in stew pot, add meat mixture and let simmer. serve with fresh parmesan and garlic toast. recommend chianti with this meal
