monterrey chicken

Ingredients monterrey chicken


4 frozen chicken breasts thawed
1 pepper to taste
4 tbsp barbeque sauce
1 cup shredded cheddar cheese
1 can diced tomatoes
1/2 cup bacon bits
4 sliced green onions

how to make monterrey chicken


Preheat oven to 400°


Pound chicken to about 1/4" thickness, season with pepper.


Grill the chicken until cooked. I use our George Foreman for about 8 minutes.


Grease a baking dish. Arrange cooked chicken in dish.


Spread barbeque sauce on top of each chicken breast (about 1 tbsp).


Sprinkle cheese on top of chicken. Add some diced tomatoes, bacon bits, and green onions.


Cook in 400° oven for about 5 minutes, or until cheese melts.
