Ingredients southwest meatloaf
2 lb ground beef
1 lb ground sausage
1 medium onion
2 large green bell peppers
3 eggs
2 packages taco seasoning
1 tbsp salt
2 tbsp black pepper
10 oz bag tortilla chips
24 oz picante sauce (not chunky)
how to make southwest meatloaf
Mix together beef and sausage in large mixing bowl.
Dice onion and bell peppers. Add to meat mixture and combine.
Preheat oven to 375°F.
In seperate bowl whisk 16oz. picante sauce, eggs, taco seasoning, salt, and pepper until smooth. Reserve 8oz picante for later.
Pour wet ingredients into meat mixture and combine well. (I use my hands)
Crush chips finely and add about half to the meat mixture. Continue mixing and slowly add more until the mixture starts to get firm.
Split mixture into 2 loaf pans. My pans are about 4x8in or so. (I use the "perfect meatloaf" pans. They are awesome!)
Bake at 375°F for 1 hour.
Remove from oven. Use remaining picante sauce and baste tops of each loaf with basting brush.
Return to oven for 10 minutes.
Let cool for 5 minutes, slice, serve, and enjoy!
My family doesn't like spicy foods so I generally use mild picante sauce. I make this meatloaf for my coworkers using medium or even hot picante for the extra "kick". This meatloaf will make even people that genarally hate meatloaf, beg you to make it again! It's great with the standard ketchup on top or even with brown gravy.
