8 oz beef tenderoin thinly sliced
1 salt amd pepper to taste
8 oz any asian noodle of choice or spagetti noodles
8 cup chopped coarse bok choy
1 lb washed torn fresh spinach
1/2 cup light coconut milk
2 tbsp fresh lime or lemon juice
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp honey
1 oil as needed for cooking
1 tbsp minced garlic
1 1/2 tsp madras curry powder
1 tbsp toasted seasame seeds
1 tbsp peeled chopped fresh ginger

combine coconut milk,juice,soy sauce,vinegar,honey, whisk to combine


cook noodles as directed on package keep warm


heat oil in large saute pan season beef with salt and pepper sear in oil remove as done to a plate


add bok choy and spinach to skillet and cook until wilted add ginger garlic amd curry powder cook a min or two add coconut milk mixture cook about 5 min


add beef to heat through and serve over reserved noodles sprinkle with sesame seeds
